Peanut Butter Crunch Bars

Do I know any other flavour combination than peanut butter and chocolate? Yes. Do I care about them as remotely as much as I do about this? Absolutely not. Not to mention, the TEXTURE and CRUNCH in this treat is beyond - simply perfection. AND it only has 4 ingredients AND it will take you 20 minutes to make! I simply can't yell about these enough - please make them immediately (however if you're trying to stick to any kind of health regime I would recommend against it as you will literally devour them in one sitting, they are that addictive).

1 x 250g block chocolate (I used Whittakers new Almond Nougat but any flavour will work)

2 Tbsp coconut oil

1 cup crunchy peanut butter (you know I only use Fix & Fogg Super Crunchy)

3/4-1 pack of rice cakes (depending on the brand you use)

Break the chocolate into a large heat-proof bowl and add coconut oil to it. Melt in the microwave for 30 seconds at a time, stirring in between, until melted.

Once melted, stir in the peanut butter to combine. The crush the rice cakes into the bowl, don't worry if there are some large pieces, this all adds to the texture. I used 3/4 packet but some brands are thinner than others, so just add a bit at a time until you're happy with the texture.

Press the mixture into a lined square tin, about 30x30cm and put in the freezer to chill for 15 minutes. Once chilled, slice into bar shapes and drizzle with some melted peanut butter.

Enjoy the crunch and addictive flavour of these peanut butter chocolate bars! Keep stored in the fridge.
