Cheesecake Truffles

Updated: May 6, 2023

The perfect little party snack that takes no time at all! You can use your favourite flavour of biscuits and change the decoration to suit any theme, just use sprinkles or food colouring to make it suit. If you don't have a food processor, just bash the biscuits up in a plastic bag with a rolling pin.

300g biscuits (e.g. Biscoff, Oreos, Mint Treats)

250g cream cheese, at room temperature

1/4 cup icing sugar

150g chocolate (white, milk or dark to suit your flavour combo)

Decorations (opposite colour chocolate for drizzling or peanut butter/cookie butter or sprinkles)

Place the biscuits, cream cheese and icing sugar in the food processor and pulse, until combined. Roll into balls and place in the freezer for 10 minutes to set.

Meanwhile, melt the chocolate in the microwave.

Dunk chilled truffles into the chocolate and place onto parchment paper, the chocolate should set relatively quickly on the chilled truffles. Decorate by drizzling with melted chocolate or peanut butter, cookie crumbs or sprinkles.

Store in an airtight container in the fridge.
