These cookies are next level. With a slight caramel flavour from the brown sugar, dark chocolate and all the toppings, they are definitely for the sweet tooths out there 😍 These ones do have to chill in the fridge before baking or they will melt into little puddles, so some patience is required.
125g butter, at room temperature
1 cup brown sugar
150g dark chocolate, melted
1 1/4 cups flour
1/2 tsp baking powder
50g dark chocolate, roughly chopped
Preheat oven to 180°C.
In a large bowl or bowl of your stand mixer, use electric beaters to cream together butter and brown sugar. Beat in egg until combined, then beat in chocolate.
Add flour and baking powder and beat together, then finish with a spatula to ensure all combined.
Place in the fridge for 1 hour to firm up.
Dollop heaped tablespoons of mixture onto a lined oven tray (or use a cookies scoop) these will spread quite a bit so make sure to leave about 5cm between each cookie.
Top each cookie with some chopped chocolate, m&m’s and crushed pretzels.
Bake for about 10 minutes, for softer cookies or 12-14 minutes for chewy cookies.
Once cooked, you can use a round a cookie cutter or a cup to gently place over each cookie and make a circle motion to shape the cookies into the perfect circle.
