Strawberry Cheesecake Ice Cream Bars

I can't tell you the last time I had Nesquik but I wanted to experiment with the pretty pink strawberry flavour. These ice cream bars came out better than I was anticipating!! And they are SO easy. Creamy strawberry cheesecake ice cream with a crunchy Oreo base - they're so nostalgic and tasty!





Ice Cream Bars

2 x 128g packets Oreos

75g butter, melted

250g room temperature cream cheese

300ml cream

150g condensed milk

1/3 cup Nesquik strawberry milk powder


Blend the Oreos in a food processor or smash them with a rolling pin in a plastic bag until they are a fine crumb. Set 1/3 aside for the topping.


With the remaining Oreos, combine with melted butter and press into the base of a dish (about 20cm square/rectangle) that is lined with baking paper or clingfilm (so you can easily remove them later). Put in the freezer to set while you make the filling.


Place the cream cheese, cream, condensed milk and strawberry powder into a food processor/blender and blend until completely smooth. Alternatively you could do this with electric beaters.


Pour filling over base and the sprinkle over remaining oreo crumbs. Place in freezer to set for at least 4 hours or overnight.


Because of the cream cheese element, these don't set completely hard - so you can eat them straight away, don't leave them out on the bench or they will melt!
