Melting Moments

I did a bake sale with several of my favourite cookies and these ones came out the crowd favourite! They are so melt-in-your-mouth (as the name would suggest) and the fruity tang makes you want to eat more than you should. Enjoy this kiwi classic!


​Makes 12

Cookies 125g butter, at room temperature 115g plain flour 45g icing sugar 50g custard powder Icing 60g butter, at room temperature 110g icing sugar 2 tsp freeze dried fruit powder (choose any flavour you like, I used strawberry in these photos but passionfruit is also a classic)     OR 2 Tbsp passionfruit pulp      OR zest & juice of 1 small lemon Preheat oven to 160°C. Line an oven tray with baking paper. Place butter in a bowl or bowl of your stand mixer and use electric beaters to mix until pale and fluffy, about 3 minutes. Add the flour, icing sugar and custard powder and stir to combine. Using a teaspoon measure, roll mixture into balls and place on prepared tray. Use a fork to flatten each cookie slightly. Bake for about 15 minutes, until cooked through and slightly golden on the edges. Allow to cool completely on a wire rack. Place all icing ingredients into a bowl or bowl of your stand mixer. Use electric beaters to mix until pale and fluffy, about 3 minutes. Once cookies have cooled, spread icing onto one cookie and place another cookie on top to make a melting moment!
