My first foray into using sourdough starter for things other than sourdough. These are the fluffiest, American-style pancakes of my dreams. Make sure you have plenty of butter and maple syrup on hand for these delights.
Makes about 6 big pancakes or 12 pikelets 1 cup plain flour 1 tsp baking powder 1 tsp baking soda 2 Tbsp sugar 1/2 tsp salt 1/2 cup sourdough starter 3/4 cup milk 1 egg 1 tsp vanilla or 1 tsp ground cinnamon (optional) Place all your ingredients in a bowl and whisk until just combined. Heat a non-stick fry pan on low heat. Its important to cook them low and slow, as they are thick they need longer to cook through, and this will prevent them burning on the bottom. Ladle mixture into pan and cook for 2-3 minutes, until you see some bubbles starting to pop. Flip and cook another 1 minute, until cooked through.
