Banana Muffins

A timeless classic that goes down well with everyone. These are so easy and ready in a flash, perfect for a picnic or the lunchbox. Best served still slightly warm with oodles of butter and a hot cuppa.

Muffins

3 large very ripe bananas (if your bananas aren't black-ripe, you may want to add another 1/4 cup sugar for sweetness)

2 eggs

1/2 cup rice bran or vegetable oil

1 1/2 cups flour

3/4 cup sugar

1 tsp baking powder

1/4 tsp baking soda

1 tsp vanilla extract

1/2 tsp salt

200g chocolate chips (optional - if you are making DF muffins, make sure to use dark/DF choc chips)



Preheat oven to 180°C bake. Line a muffin tin paper liners.


Place bananas in a large bowl and mash with a fork. Stir through oil and eggs.


Fold in all remaining ingredients, until just combined.


Scoop about 1/3 cup of batter into each muffin cup and bake for 25 minutes, until a skewer inserted comes out clean.


Serve warm with a pat of butter 😋
