If you're not into cake, this cookie slice can make for a great alternative for celebrations. Just bake it into a cake tin or shaped mould and then you can decorate with melted chocolate and sprinkles to suit your theme! This time around I made a valentines version ❤️
Serves 4 (you might want to double this if you're having a party!)
65g butter (very soft)
1/3 cup brown sugar
1/3 cup peanut butter
1 egg yolk
1/2 cup flour
1/2 tsp baking powder
1/4 tsp salt
1/4 cup chocolate chips or MnMs
Preheat oven to 160°C. Line a 20cm cake tin or use a silicone mould.
Beat together butter, sugar, peanut butter and egg. Add remaining ingredients and combine.
Transfer to prepared vessel and bake for 15-18 minutes, until golden. Allow to cool completely before removing from tin.
Melt some chocolate to drizzle over and finish with sprinkles, then slice up to serve!
