I'll choose dark chocolate over white chocolate most days, but for those days when you're in the mood for something a bit different, these really hit the spot. They're very easy to make and you can change the chocolate or nuts to any other mix-ins you like!
Makes 12 170g butter 90g brown sugar 90g caster sugar 250g plain flour ½ tsp salt ½ tsp baking powder 1 egg, whisked 2 tsp vanilla extract 100g chopped white chocolate 100g chopped nuts (e.g. cashews or macadamias) Preheat oven to 180°C. Line an oven tray with baking paper. Place butter in a small pot and cook on low heat for about 10 minutes, until starting to brown (it may look split, but don't worry this is normal). Place sugars, flour, salt and baking powder in a large bowl. Add browned butter, egg and vanilla and mix gently, then stir through chopped chocolate and nuts and form a dough. Measure slightly heaped tablespoons of dough and drop onto prepared tray. Bake for 10-12 minutes or until lightly browned. Leave to cool on tray for a few minutes before transferring to a wire rack to cool completely.
