Everything Bagel Latke

This is a super simple recipe that is great for using up some odd potatoes. I've made suggestions for bagel toppings but they are a great vessel for poached eggs or any type of brunch food really!



Serves 2

2 medium potatoes

1 egg

1/4 cup oil, for frying

cream cheese

smoked salmon

pickled onions

spring onions

bagel seasoning (if you're in NZ I use Pepper & Me Tik Tok Trending)


Grate the potatoes and squeeze out all the moisture. Rinse under cold water then squeeze again, until they are dry and the starches have been removed.


Place in a bowl with egg and whisk to combine. Season really well with salt and pepper, you could also add any herbs or spices you fancy.


Heat a small fry pan on high heat with the oil, wait until it is bubbly and super hot before adding in half the mixture. Cook for about 2 minutes until golden, then flip and cook a further 2 minutes. Set aside on a paper towel while you cook the next one.


Top your latke with cream cheese, smoked salmon, onions and bagel seasoning.
