A great one to make with leftover bits of cereal from the cupboard. Kids love this one. Crispy, crunchy and delicious.
Makes about 20 slices Base 1 cup sugar 2 Tbsp cocoa powder 1 cup flour 1 cup desiccated coconut 1 tsp baking powder 3 weetbix OR 1½ cups cornflakes OR 1½ cups rice bubbles 185g butter, melted Icing 2 cups icing sugar 2 Tbsp cocoa powder 50g butter, at room temperature 3 Tbsp boiling water Preheat oven to fan bake 180°C. Line a baking dish with baking paper (about 25x20cm). Add sugar, cocoa, flour, coconut, baking powder and cereal of choice to a large bowl. Crush cereal into bowl, ensuring there are no big pieces (no need to crush rice bubbles). Mix to combine then pour in butter and mix until fully incorporated. Transfer to prepared dish and use the back of a spoon to smooth out mixture into an even surface. Bake in oven for 20 minutes. Allow to cool for 10 minutes before icing. Combine all icing ingredients in a large bowl and whisk until smooth. Use a spoon to spread icing over base. Place in the fridge for 1 hour to firm up before slicing.
