I would never usually go for a blondie but in the spirit of Christmas I wanted to create something spiced and festive. The smell of brown butter filling your home is unparalleled! Add in a little Christmas spice and some white chocolate, this is a tasty treat all year round!
Makes 16
150g butter
1 tsp vanilla extract
1¼ cups brown sugar
2 eggs
3/4 cup flour or ground almonds
1/2 tsp salt
2 Tbsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp nutmeg
1/4 cup white chocolate drops
1/4 cup chopped nuts (e.g. macadamia or pecans)
Topping
1/4 cup white chocolate drops, melted
Christmas sprinkles
Preheat oven to 180°C. Line a baking dish (about 15x20cm) with baking paper.
Place butter in a small pot on medium heat. Cook for 8-10 minutes, the butter will bubble up and then settle down and will be a beautiful golden brown. Pour this into a bowl, making sure to get all the golden bits from the bottom of the pan.
Add vanilla and brown sugar to the butter and stir to combine.
Add the eggs and stir to combine. Then add the flour/almonds, salt, spices, chocolate and nuts and mix through.
Transfer to prepared dish and bake for about 25 minutes.
Meanwhile melt white chocolate in the microwave, if it is a bit thick, you can add a teaspoon of coconut or vegetable oil to thin it out. Drizzle this over the cooked brownie and top with any sprinkles.
Allow to sit for at least 20 minutes before slicing.
